We use only the finest rice and natural mineral water as ingredients. Our brewing techniques have been refined and perfected during 150 years experience of sake production.

Shirataki Sake Brewery is based in Echigo Yuzawa Town, Niigata Prefecture, an area renowned for its heavy snowfall. In spring the snow melts to provide an abundance of clear natural mineral water a prime ingredient for sake, which consists of 85% water. The molten snow passes though a coal seam when running downhill from mountain peaks: thus a natural charcoal filtration process further accentuates the taste and quality of the water.

The other main ingredient for sake is rice: the abundance of clear natural water provides irrigation for rice-paddies – creating the best quality ingredients for sake. Echigo Yuzawa is home to “Koshihikari” the most famous, high-quality rice brand in Japan.

Shirataki Labels

  • Jozen Mizunogotoshi
    The style of this label is to provide a light, clear sake that is easy on the palette, but offers a background of subtle tasting notes. Jozen is an ideal accompaniment for a variety of foods, and for beginners to the world of sake, this is an ideal introduction. As such, Jozen is one of the most popular sake labels in Japan.

  • Minatoya Tosuke
    This label is named after the founder of Shirataki Sake Brewery. In keeping with the venerable traditions associated with such a name, the Minatoya Tosuke label offers the deep flavour and characteristics of traditional sake for a modern age.

  • Uonuma
    “Uonuma” is a local area of Niigata Prefecture famed for its natural beauty. The kura-bito have a long history of affection for the Uonuma area due to its production of excellent rice crops, and this is shown in Uonuma sake. This rich, deep sake is a manifestation of the wealth of experience of sake making in this area and is as much enjoyed by locals of Uonuma as sake-lovers around the country.

  • Shingono Ippon
    Only the very best Yamada-nishiki rice is used in the creation of this sake, which is brewed using the traditional cotton moromi pressing technique. The traditional techniques make for an elegant sake with strong, complex flavours and a powerful aroma.

  • Shirataki International
    Sake shows the essence of Japan, yet is enjoyed around the world. Our International label highlights a sake style highly popular in international markets. The distinctive label design was created by a French artist, who painted the rice paddy files of the Echigo Yuzawa area.

Tasting Tours
We would be pleased to arrange tasting tours free of charge at the sake showroom in our offices. Our offices are only a 5minute walk from Echigo Yuzawa train station. Please feel free to contact us in order to reserve a time.
Our sake tasting showroom is open Monday to Friday from 9am-12pm, and 1pm-4pm. The showroom is closed on national holidays.

Due to the highly delicate nature of the sake producing process, we are unable to escort customers into the kura brewery itself.

Twinbird Corporation is producing a compact FPSC (Free Piston Stirling Cooler) after technical introduction by and ongoing collaboration with Global Cooling BV (The Netherlands, Research Center in Athens Ohio, USA; Principal Dr. David Berchowitz).
The FPSC is a Stirling heat pump that uses a small amount of helium gas as a heat transport medium, instead of standard refrigerants. The FPSC has an advantage, over traditional cooling systems, in energy efficiency and environmental friendliness. These advantages are accomplished using state of the art technology and by virtue of being Freon, CFC, HC and HFC free.
The FPSC has two major moving parts (piston and displacer) that oscillate in a linear motion along the same axis within a single cylinder which is installed in a stainless steel casing. The piston repeatedly compresses and expands the helium gas to cool the tip (cold head) of the extended part of the casing. By fixing a thermal load or secondary heat transport mechanism to the cold head, the FPSC can be used to cool an object down to a temperature between -50C and -80C within several minutes, depending on the load, at an ambient temperature condition of 25C.

Main Feature

  • Environmentally Friendly
    Helium (He) is a naturally occurring gas which is harmless to the human body, does not endanger the Ozone Layer and does not contribute to global warming. When Helium is used as a refrigerant, it can efficiently replace the current generation of environmentally harmful refrigerants.

  • Super Cooling Capacity
    The FPSC can easily reach a temperatures below -50C (On the Cold Head). This feat is extremely difficult to achieve with Rankine compressors, often requiring bulky cascade systems using multiple compressors. The FPSC has a high efficiency. It can be as much as 6 times higher than thermoelectric (Peltier) coolers.
    : Coefficient of Performance (COP) as high as 1.1.

  • Light Weight & Compact Size
    FPSC Weight : 1.7Kg (less than half the weight of comparable compressors) The FPSC is suitable for use in small counter top freezers or portable refrigerators as well as special low temperature applications.

  • Cooling Capacity & Temp. Control
    The FPSC is continuously modulated by an electronic circuit, not by on/off cycling as in compressor systems. The control circuits supply only the power required to maintain a constant set temperature allowing for extremely precise temperature control, ideal for sensitive applications.

  • Energy Saving
    The FPSC uses less than 40W of electricity.The FPSC is compatible with various energy sources such as a 12VDC car battery, Photovoltaic (solar cells) or in-house generators as well as 110/220VAC electricity.

His son, Makoto now takes over the farm business.
Our farm is concentrated on quality. We aim to breed Nishikigoi equipped with all elements; quality, good body conformation and patterns. We want to produce impressive Nishikigoi that would dwell in our customers’ hearts.
We are breeding Taisho Sanshoku (Sadazo-line Marusho Sanke), Ginrin Sanke, Ginrin Showa, Doitsu Sanke, Doitsu Showa, Beni Kumonryu and Shusui now.

Our farm is located in Yomogihira, deep in the mountain area. We have plenty of fresh spring water from deep snow that falls in winter time, up high in the mountains above our area. This environment is said to have good effect on Nishikigoi. Yomogihira is called to be a Sanke-place, as our forerunners has been enthusiastic in producing Sanke.

In order to produce good quality Tosai fish, it is important to select a good combination of parent koi. It affects the number of Tosai fish with good quality and potentiality. Koi without quality and potentiality will not grow up to be a good koi, in any way, with any whatever effort. But beauty of Nishikigoi is not solely dependent on the potentiality that the koi is born with. It also takes good environmentand much care. It is important to grow high potential koi with much care in a good environment.

So, our environment in Yomogihira seems to bring forth the very good characteristics that Sanke has. So that good Sanke grow more beautifully in the mud ponds in Yomogihira. Especially, big Sanke more than four years old come up very beautifully from mud ponds. This is one of the reasons that this area is called to be a Sanke-place.

We also specialize in Sanke, making use of this geographical advantage.
Our farm uses about 30 natural ponds between 1,000-3,000 sq. meters and keep very small numbers of koi per pond. We aim to raise koi with very natural and beautiful body conformation.

Sanke is required to have very high standard on elements of koi appreciation – white background, “Beni” quality, “Hi” – pattern, “Sumi” quality, placements of “Sumi” spots… – so producing Sanke is not always so easy.

And though Yomogihira is called to be a Sanke-place, it is been a while since an extrordinary Sanke has been produced from here. But now, though not yet so many, we have produced some Sanke that would meet the standards of public appreciation. We would like to develop our Marusho Sanke line, by keeping the good tradition and by introducing new lines.
